Grilled Portabella Sandwiches with Chipotle Mayonnaise

Ingredients
- 2 large portabella mushrooms, sliced 1/2 inch thick
- 2 TB. mayonnaise
- 1/4 tsp ground chipotle pepper
- 1/2 c. olive oil
- 2 tsp. minced garlic
- 1 tsp. parsley
- 1 tsp. seasoned salt
- 1/2 tsp. ground pepper
- 2 hamburger rolls
- 2 slices swiss cheese, optional

Step 1
Preheat grill. In small bowl, mix together the mayo & chipotle pepper; set aside. In wide, shallow bowl, mix together oil, garlic, parsley, salt & pepper. Dunk each slice of mushroom in the oil mixture, coating both sides. Place mushrooms on grill, cook about 5 min. per side;they should be browned with nice grill marks. Place buns on grill to lightly toast. Romove everything from grill. Spread ½-1 TB. of the chipotle mayo on each bun & top with mushroom slices. Add swiss cheese if desired.
