Chocolate Crispy Treats

Ingredients
- 4 tablespoons (1/2 stick) unsalted butter
- 4 cups miniature gluten-free marshmallows (Kraft marshmallows are gf, for example)
- 5 cups chocolate crispy rice cereal (I used EnviroKidz Koala Crisp Cereal chocolate rice cereal, but any gf rice cereal will do)

Step 1
1. In a medium saucepan, melt butter over medium-low heat. Add marshmallows and mix, stirring constantly until completely melted. Remove the pan from the heat and add the rice cereal. Stir in big strokes until the cereal and melted marshmallows are evenly distributed in each other. Allow the mixture to cool briefly until it is still warm but not too hot to touch.
2. Turn the mixture out onto a large piece of wax paper and, working quickly with cool, wet hands, form into small rounds. Place rounds about 1″ apart on wax paper to cool completely.
3. Eat what you like, then store remaining treats in an airtight container until you eat them all. It would be just ridiculous to throw anything out. Ridiculous, I tell you.
