Ingredients

  • 3 red peppers
  • 4 cloves garlic
  • 2 zucchinis, cut in 3 inch strips
  • 1 onion, cut in 1/2 inch slices
  • 1 T oil
  • 1/4 c parsley, chopped
  • 1 3/4 c egg substitute
  • 1/4 t cayenne pepper

Preparation

Step 1

1) Place vegetables in a 9x13 pan. Sprinkle with oil. Bake at 425 for 25 minutes.

2) Pour remaining ingredients in a large bowl. Chop the vegetables and add to bowl.

3) Pour into a greased 9 inch round pan.

4) Bake for 45 min.
