Ingredients
- 3 red peppers
- 4 cloves garlic
- 2 zucchinis, cut in 3 inch strips
- 1 onion, cut in 1/2 inch slices
- 1 T oil
- 1/4 c parsley, chopped
- 1 3/4 c egg substitute
- 1/4 t cayenne pepper

Preparation
Step 1
1) Place vegetables in a 9x13 pan. Sprinkle with oil. Bake at 425 for 25 minutes.
2) Pour remaining ingredients in a large bowl. Chop the vegetables and add to bowl.
3) Pour into a greased 9 inch round pan.
4) Bake for 45 min.
