Ingredients

  • 2 large zucchini, cut in half lengthwise
  • 1 large onion, chopped
  • 1/2 stick butter
  • 2 hard-cooked eggs, mashed
  • 1 c. cheddar cheese, shredded
  • 1-2 garlic cloves, minced
  • salt & pepper to taste
  • 1 tsp. dried parsley (or 2 tsp. fresh)
  • Cracker crumbs
  • Butter for cracker crumbs
  • Paprika

Scoop out pulp of zucchini & chop. Melt butter in fry pan & saute' zucchini pulp & onion until tender. Remove from heat & add cheddar, eggs, garlic, salt & pepper & parsley. Add approximately ¼ c. cracker crumbs to mixture. Scoop into zucchini boats & place boats in baking dish. Add enough butter to remaining crumbs to allow consistency for sprinkling on zucchini mixture. Add small amount of water to bottom of dish. Bake @ 350 degrees about 45 min. or until lightly browned & tender.
