Ingredients
- 1/2 head lettuce
- 1 cut clove garlic
- 1 small cucumber
- 2 tomatoes
- 1 small onion or 3 green onions
- Green pepper
- Salt and pepper to taste
- Lemon juice or wine vinegar
- olive oil
- 1/2 cup crumbled feta cheese
- Calamata or Greek black olives
- Anchovies(optional)
- Fresh parsley, dill, fennel or mint
- Dried oregano

Preparation
Step 1
Prepare lettuce as directed below
" In a true Greek sald, one never sees the lettuce torn into bite-size pieces; it is finly sliced. Leaves should be separated, washed under cold running water, drained, wrapped in a clean kitchen towel and refrigerated. The towel absorbs the moisture clinging to the leaves, allowing the dressing later to coat them. The dressing, of course, is always added at the last possible moment just before tossing".
Place the lettuce in a large salad bowl that has been rubbed with cut garlic. Cut up remaining vegetables as desired; add to lettuce. Add salt and pepper and toss. Serve with a dressing that consists of 1 part lemon juice or wine vinegar to 2 parts olive oil. Garnish with feta cheese, olives and anchovies. Sprinkle with fresh herbs or dried oregano.
