Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon allspice or nutmeg
- 3/4 teaspoon salt
- 3 eggs
- 3/4 cup vegetable oil
- 1 teaspoon vanilla
- 1/2 cup chopped nuts
- 2 cups shredded zucchini(not peeled)

Step 1
Preheat oven to 350F. Grease a loaf pan or spray with nonstick spray. Stir together flour, sugar, baking soda, salt and spices in large bowl.
In another bowl, beat eggs; add oil and vanilla, then add to dry ingredients. Press zucchini to remove all liquid. Add zucchini and nuts to batter.
Pile into loaf pan. Bake for 55 to 60 minutes. Test with cake tester or toothpick to make sure middle is done.
