Ingredients
- 3 lb. red potatoes
- 2 tsp. salt, divided
- 1 c. mayonnaise
- 1 can chopped green chilies
- 1/3 c. chopped fresh cilantro
- 3 green onions, chopped
- 2 Tbs. fresh lime juice (about 2 limes)
- 1 garlic clove, minced
- 4 slices maple bacon, cooked & crumbled
- Cilantro for garnish

Preparation
Step 1
Cook potatoes in 1 tsp. salt & water until fork tender. Drain & cool. Cut into quarters. Stir together mayonnaise & next 6 ingredients & remaining salt in large bowl; add potatoes & toss to coat. Cover & chill @ least 4 hrs. Stir in bacon just before serving & garnish with cilantro.
