Ingredients
- 3 egg yolks
- 1 cup granulated sugar
- 2 cups heavy cream
- 1 Tablespoon vanilla
- 4 Tablespoons brown sugar

Step 1
Preheat oven to 250 degrees.
In a bowl, combine egg yolks and granulated sugar and beat together until completely creamed and lemon colored. Set aside.
In a saucepan, stir together the heavy cream and vanilla over medium heat until it begins to simmer. Remove from heat. Slowly pour cream into egg mixture, whipping until cream is incorporated. Strain mixture through a fine sieve.
Divide mixture into four (6 oz.) ramekins. Place ramekins in a roasting pan, and carefully fill the pan with water to a depth of one inch. Bake uncovered for 50 minutes.
Remove from pan and place in refrigerator for 6 hours until completely cool. Before serving, spread 1 tablespoon of brown sugar evenly over each baking dish. Heat sugar with Bernz-O-Matic, or under a pre-heated broiler, just until sugar carmelizes.
Makes 4 servings.
