Ingredients

  • 1 large onion, chopped
  • 1/4 cup olive oil
  • 1 cup long grain rice
  • 1/4 cup tomato sauce
  • 2 cups boiling water
  • 2 beef bouillon cubes(optional)
  • Salt and pepper to taste
  • 1 pound fresh spinach
  • Juice of half lemon

Preparation

Step 1

In a large kettle, saute onions in hot oil until tender. Add rice; saute a few minutes, stirring constantly. Add tomato sauce, water, bouillon cubes, salt and pepper; bring to a boil. Add spinach and cover; simmer 20 minutes or until rice is tender. Let stand 15 minutes. Sprinkle lemon juice over top. Serve warm.
