Ingredients

  • 2 eggs, slightly beaten
  • 1/2 c. firmly packed brown sugar
  • 1/2 c. honey
  • 1/2 c. melted butter
  • 1 tsp. vanilla
  • 1 &3/4 c. flour
  • 1 tsp. baking soda
  • 2/3 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. nutmeg
  • 11/2 tsp. cinnamon
  • 1 c. granola
  • 1/2 c. chopped nuts
  • 2 c. shredded zucchini

Step 1

Preheat oven to 350 degrees. Spray muffin cups with nonstick cooking spray. In large bowl, beat eggs, brown sugar, honey, butter & vanilla together. In separate bowl, stir together flour, baking soda, salt, baking powder, nutmeg & cinnamon. Add dry ingredients to egg mixture, stirring just until moistened. Fold in granola, nuts & zucchini. Fill cups ¾ full. Bake 20-25 min.
