Ingredients

  • 1 c. whole wheat flour
  • 1 c. all-purpose flour
  • 1/2 c. packed brown sugar
  • 2 &1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/8 tsp. cloves
  • 1/2 tsp. salt
  • 1 c. skim milk
  • 2 egg whites
  • 1 Tbs. oil
  • 1 c. finely grated raw sweet potato
  • 1/2 c. finely chopped dried pears
  • 1/2 c. chopped nuts
  • 1-2 Tbs. turbinado sugar (optional)

Preparation

Step 1

Preheat oven to 375 degrees. Coat 12 muffin cups with cooking spray.

Combine 1st 7 ingredients in mixing bowl. Combine milk, egg whites & oil in separate bowl & whisk well.

Make a well in center of dry ingredients. Pour wet ingredients into well & stir just until combined. Gently fold in sweet potato, pears & nuts.

Fill muffin cups 2/3 c. full. Sprinkle with sugar, if desired. Bake 18-20 min. until centers spring back.
