Ingredients
- 1 c. whole wheat flour
- 1 c. all-purpose flour
- 1/2 c. packed brown sugar
- 2 &1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1/8 tsp. cloves
- 1/2 tsp. salt
- 1 c. skim milk
- 2 egg whites
- 1 Tbs. oil
- 1 c. finely grated raw sweet potato
- 1/2 c. finely chopped dried pears
- 1/2 c. chopped nuts
- 1-2 Tbs. turbinado sugar (optional)

Preparation
Step 1
Preheat oven to 375 degrees. Coat 12 muffin cups with cooking spray.
Combine 1st 7 ingredients in mixing bowl. Combine milk, egg whites & oil in separate bowl & whisk well.
Make a well in center of dry ingredients. Pour wet ingredients into well & stir just until combined. Gently fold in sweet potato, pears & nuts.
Fill muffin cups 2/3 c. full. Sprinkle with sugar, if desired. Bake 18-20 min. until centers spring back.
