Chicken With Sun-Dried Tomatoes

Ingredients
- 3 Tbs. olive oil
- 4 skinless, boneless chicken breasts
- 1 shallot, finely chopped
- 1 can condensed cream of mushroom soup
- 3/4 c. water
- 1/4 c. thinly sliced sun-dried tomatoes
- 1 Tbs. red wine vinegar
- 2 Tbs. chopped fresh basil
- 2 Tbs. sliced Kalamata olives
- 4 c. cooked extra wide egg noodles
- 1/4 c. shredded Parmesan cheese

Preparation
Step 1
Heat oil in skillet over medium-high heat. Add chicken & cook 10 min. or until well browned on both sides; remove.
Add remaining oil to skillet; add shallot & cook 2 min. Stir in soup, water, tomatoes, vinegar & basil.
Return chicken to skillet & heat to boil. Reduce heat to low. Cook 5 min. or until chicken is cooked through. Serve over noodles. Sprinkle with cheese & added fresh basil.
