Ingredients

  • Filling Ingredients
  • 5-6 (Empire or Granny Smith or whatever you like) apples, peeled, cored & sliced thinly
  • 1 tsp. ground cinnamon
  • 2 tbsp. granulated sugar
  • Topping Ingredients
  • 10 tablespoons unsalted butter, at room temperature
  • 1 cup. granulated sugar
  • 1 large egg, slightly beaten
  • 2 tsp. vanilla extract
  • 1 1/4 cup Bob’s Red Mill GF All Purpose Flour
  • 1/2 teaspoon xanthan gum
  • 1/4 cup Cream Hill Estates GF Rolled Oats
  • 1 cup. chopped walnuts or pecans (optional)

Preparation

Step 1

1. Preheat oven to 350 degrees. Grease 9″ pie plate & set aside.

2. Make the filling. Combine filling ingredients & place in prepared pie plate, piled toward middle of the plate. You can toss the apples with the cinnamon & sugar right in the pie plate. Easy peasy.

3. Make the topping. In a large bowl, blend butter & sugar until light & fluffy. Add egg and vanilla and blend well. Add flour, xanthan gum & oats until just combined. And if you don’t have oats, add 1/4 cup more GF flour + 1/8 teaspoon xanthan gum. No biggie. Add the (optional) nuts, if using. Mixture will be thick. Cover apples with topping, spreading it evenly with wet hands.

4. Bake until golden brown, approximately 45 minutes. Check after about 30 mins. in and tent with foil if topping is starting to burn.
