  • 1 cup Member's Mark Egg Whites
  • 1/2 cup diced yellow pepper
  • 1/2 cup diced red pepper
  • 2 tablespoons parsley

Preparation

Step 1

1. Spray skillet with non-stick cooking spray and preheat over medium heat.
2. Shake Member's Mark Egg Whites, measure and pour into a mixing bowl.
3. Stir in diced peppers and parsley
4. Pour mixture into heated skillet.
5. Without stirring, cook until the side and bottom portions begin to set.
6. As the mixture begins to set, use a spatula to move the cooked portion to the top of the pan, exposing the liquid portions to the heat at the bottom of the pan.
7. Continue until mixture is thickened and no visible liquid egg remains.
