Ingredients

  • 1 3/4 lbs asparagus, stems trimmed
  • 1/4 cup finely chopped red bell pepper
  • 3 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 tbsp rice vinegar
  • 2 tsp honey, or to taste
  • 1/2 tsp sesame oil
  • 1 tsp hot Asian-style chili sauce, or to taste
  • 1 medium garlic clove, mined
  • 1 tsp finely chopped fresh ginger

Preparation

Step 1

Boil asparagus until just tender, about 90 seconds. Drain well, cool in ice-cold water and drain well again. Arrange asparagus on a serving platter; cover and refrigerate until needed.

Combine the remaining ingredients in a bowl. Cover and refrigerate dressing until needed (the asparagus and dressing can be made several hours in advance of serving).

When ready to serve, uncover asparagus an drizzle with the dressing. Let the asparagus meld with the dressing at room temperature for 20 minutes and then serve.
