California Vegetable Quiche

Ingredients
- 1 lb summer squash - yellow and green
- salt and pepper to taste
- 4 eggs - well beaten
- 2 cup grated cheese - Swiss or Monterey Jack
- 1 tsp of either - dill, basil, oregano or tarragon
- 1/4 cup grated parmesan cheese
- Sliced tomatoes

Preparation
Step 1
Preheat oven to 350F.
Coarsely grate squash into bowl.
Spinkle with salt andlet stand.
Squeeze out all liquid.
In a large bowl combine squash, eggs, cheese and seasonings.
Pour into a greased 8inch baking dish and top with parmesan cheese.
Bake 30-40 minutes or until quiche is set in center and edges are lightly browned.
Serve with tomatoes.
Tip:
Can substitute 2 1/2 cup shopped steamed greens - spinach, mustard, ect - for squash.
