Ingredients

  • 1 lb. pinto beans
  • 31/2 c. water
  • 4 chopped tomatoes
  • 1 chopped onion
  • 1/4 c. chopped red or green bell pepper
  • 1 clove garlic, crushed
  • 1 tsp. salt
  • 1/2 tsp. dried oregano
  • 1/4 tsp. dried rosemary
  • 1/2 tsp. dried basil
  • 11/2 c. Mozzarella cheese, shredded
  • 1/4 c. Parmesan cheese, grated

Preparation

Step 1

Rinse beans and remove anything that is not a bean. Soak beans in water overnight at room temperature.

In a Crockery Pot, mix everything EXCEPT the Mozzarella and Parmesan. Cover and cook on high 6 to 7 hours or until beans are tender.

Top with Mozzarella, then with Parmesan cheese. Cover and cook another 10 minutes or so until cheese melts.
