Ingredients
- 2 c. All-Bran cereal
- 2/3 c. wheat bran
- 1 &1/3 c. boiling water
- 2 &2/3 c. all-purpose flour
- 1 Tbs. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 2 c. low-fat buttermilk
- 1/2 c. egg substitute
- 1 c. sugar
- 1/2 c. packed brown sugar
- 1/2 c. oil
- 1 tsp. vanilla

Step 1
Mix cereal & wheat bran in large bowl. Add boiling, stir well & set aside 1 hr.
Whisk together flour, soda, salt, cinnamon & nutmeg in separate bowl.
Preheat oven to 375 degrees. Coat muffin cups with cooking spray.
Add 1 c. buttermilk to bran mixture, stir well with whisk. Add remaining buttermilk, egg substitute, sugars, oil & vanilla, stirring until smooth.
Add flour mixture; stir until a thick batter forms.
Fill muffin cups 2/3 c. batter. Bake 20-25 min. until lightly browned & tops spring back.
