  • 3/4 cup packed dried apricots
  • 1/4 cup butter
  • 1 cup flour
  • 3/4 cup sugar, divided
  • 2 Tbsp 1% plain yogurt
  • 2 eggs
  • pinch salt
  • 1/2 cup slivered almonds

Step 1

In small saucepan, combine apricots with enough water to cover. Cover and bring to boil. Remove from heat. Let stand for 1 minute. Drain; let cool. Chop finely; set aside.
In bowl cut butter into flour until mixture resembles fine crumbs. Stir in 1/4 cup of the sugar and yogurt until combined. Press into lightly greased 8" square pan. Bake at 350° F for about 20 minutes or until golden. Meanwhile, beat together eggs, remaining sugar and salt just until combined; stir in apricots. Pour over base; sprinkle with almonds. Bake at 350° F for about 30 minutes or until set and golden brown. Let cool in pan. Cut into squares.
