Ingredients

  • 1 large onion, chopped
  • 1/2 cup olive oil
  • 1/3 cup vegetable oil
  • 1 (10 ounce) package frozen, chopped spinach, thawed
  • 3 tablespoons tomato paste
  • 3 quarts water
  • Salt and pepper to taste
  • 3/4 cup long grain rice

Step 1

In a large kettle, saute onions in the olive and vegetable oil until golden. Add spinach; cook several minutes. Dilute tomato paste in a little water; add to spinach and onion mixture. Add water. Season to taste. Bring to a boil, add rice and stir. Reduce heat, cover and simmer about 1 1/2 hours.
