Ingredients

  • Two , 2 1/2lb beef tenderloins
  • 2 Tbl. Dried Oregano
  • 1 Tbl. Garlic Powder
  • 1 Tbl. Cracked Black Peppercorns
  • 1 Tbl. Celery Seed
  • 1 Tbl. Marjoram
  • 1 Tbl. Coarse Salt
  • 1 Tbl. Dried Thyme

Preparation

Step 1

In a bowl or jar combine seasonings.
Remove excess fat from fillets.
Rub seasoning mix on all sides of both fillets- coat completely.
Place beef on plate, cover lightly with wax paper.
Allow to stand in refrigerator for 2 hours.
Place fillets on roast rack
Roast in oven at 450 degrees for 40 minutes (for medium rare)- times will vary depending on thickness of meat.
Remove to warm platter and slice in 1/2 portions.

Serve with Horseradish cream sauce.
