Ingredients
- 4 cups cooked rice
- 1 1/2 cups sour cream
- 4 jalapeño peppers, chopped
- 2 tbsp Parmesan cheese
- 1/4 lb butter
- 8 oz Cheddar cheese, grated

Preparation
Step 1
Mix together rice, sour cream, peppers and Cheddar cheese. Put in 2 quart casserole dish. Sprinkle with Parmesan cheese and dot with butter.
Place in preheated oven to 375 degrees and bake for 45 minutes.
