Ingredients

  • 1 lb. hot or mild ground pork sausage
  • 1/4 cup chopped onion
  • 2-1/2 cups frozen cubed hash browns
  • 5 eggs OR 2 eggs & 3 egg whites, lightly beaten
  • 2 cups shredded sharp Cheddar cheese
  • 1-3/4 cups milk
  • 1 cup regular or light Bisquick Mix
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

Cook sausage & onion in a large skillet over medium-high heat 5 minutes. Stir in hash browns & cook 5-7 minutes or until sausage is no longer pink & potatoes are lightly browned. Drain on paper towels, if necessary. Spoon into a greased 9 x 13 baking dish. In a medium bowl, combine eggs, cheese, milk, Bisquick, salt, & pepper. Pour evenly over sausage mixture, stirring well. Bake at 350, covered, for 20 minutes. Uncover & bake 5 minutes.

*You can make ahead & chill 8 hours or overnight. Bake, covered, 45 minutes, then uncovered 10-15 minutes.
