Ingredients

  • 1/2 cup lentisl
  • 1 1/4 cup water
  • 3 slices bacon
  • 1/2 cup chopped onion
  • 1 1/2 cup French bread croutons
  • 2 large garlic cloves minced
  • 1.2 Tbsp Dijon mustard
  • 1 1/2 Tbsp red wine vinegar
  • 2 Tbsp olive oil
  • 3 1/2 cup coarsely shredded Savoy cabbage
  • salt and pepper

Preparation

Step 1

Rinse lentils and combine with water. Bring to a boil, cover and simmer about 20 minutes until tender but not mushy.

Fry bacon slices and retain bacon fat.
Using the bacon fat saute the onion and croutons.

To make dressing combine garlic, salt, pepper, mustard, vinegar and oil.
Combine cabbage with dressing. Drain lentisl and add to cabbage while hot. Before serving, toss with bacon, onions and croutons.
