Ingredients

  • 2-3 c. cold, cooked white rice (not Minute Rice)
  • 1 & 1/2 c. cubed ham
  • 1 medium onion, diced
  • 1 c. frozen peas
  • 2 eggs, beaten
  • Peanut or olive oil
  • 1 Tbs. Toasted sesame oil
  • Soy sauce
  • Grated ginger
  • Minced garlic

Step 1

Prepare rice at least one day ahead: Rinse uncooked rice well by covering in saucepan with cold water & drain in colander. Repeat this process 3 more times to remove starch. Cook rice according to package directions. Refrigerate overnight.

Heat peanut or olive oil in wok, add rice, ham, onion, peas, ginger & garlic. Saute' until hot. Drizzle in sesame oil. Make well in center of rice, pour beaten eggs into well & scramble, then mix throughout rice mixture. Remove from heat & add soy sauce to taste.
