Ingredients

  • 3 1/2 - 4 lb roasting chicken ( I use chicken breast)
  • 3/4 pint red wine
  • 2 clove garlic, crushed
  • Pinch marjoram
  • 2 Tbsp plain flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 oz butter
  • 4 Tbsp cooking brandy
  • 1 bay leaf
  • 1 sprig parsley
  • 12 small whole mushrooms
  • 8-12 small white onions

Preparation

Step 1

Place chicken pieces in a china or glass bowl with wine, sprinkle with garlic and marjoram. Allow to stand at least 2 hours, stirring occasionally. Remove chicken from wine, dry well. Roll in flour, mixed with salt and pepper. Place butter in a large heavy saucepan. Brown chicken in butter. Add brandy and ignite. Add remaining ingredients and wine. Cover and simmer over low heat 1 -2 hours. Serves 6
