Buttermilk Banana Bread with Nuts

Ingredients
- 1 cup margarine
- 2 1/2 cups sugar substitutue suitable for baking
- 1 1/2 teaspoons baking soda
- 3 cups sifted white whole wheat flour
- 1 teaspoon salt
- 4 egg yolks, beaten
- 6 tablespoons buttermilk
- 2 teaspoons vanilla
- 2 cups mashed ripe bananas (4 to 5)
- 1 cup chopped nuts (optional)
- 4 egg whites, beaten

Preparation
Step 1
Cream margarine and sugar.
Combine salt, baking soda and flour and add to creamed mixture, alternating buttermilk and egg yolks.
Add bananas, vanilla and nuts (optional). Fold in egg whites.
Pour into greased loaf pans and bake at 325 degrees F for 90 minutes. Makes 2 large or 4 miniature loaves.
