High-Protein Vegan Quinoa-Sweet Potato Croquette Recipe 1 Picture

Ingredients

  • 1 cup cooked and mashed sweet potato (I prefer to leave it slightly chunky)
  • 1/4 cup re-fried black beans
  • 1 cup cooked quinoa
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon cumin
  • 1 scallion, diced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon sea salt
  • 1/4 cup breadcrumbs to roll croquettes in (optional)

Preparation

Step 1

Cook the quinoa according to the directions on the package. While the quinoa is cooking, steam the sweet potato. Chop the cilantro and scallion.
Once the quinoa and sweet potato are fully cooked, mash the sweet potato. I left a few small chunks of potato to give the croquettes a little extra texture. Next, combine all the ingredients except for the breadcrumbs into a large bowl and mix well.
Preheat the oven to 400 degrees. Form the mixture into 1-and-1/2 inch patties about 1/2 inch thick. The mixture will be very soft and slightly wet. Coat the top and bottom with breadcrumbs and place on a baking sheet.
Bake in the oven for 16 minutes, flipping them over halfway through baking. Enjoy!
