Ingredients
- 1 1/2 lb Italian hot chicken sausage
- 1 10 Oz can RO TEL Diced Tomatoes and Green Chilies
- 2 cups diced onions
- 2 cans Tomato sauce
- 1 1/2 cup Heavy Cream
- 3 Garlic cloves minced
- 3/4 cup Bread Crumbs, plan
- 1 cup sliced Carrots
- 16 oz pack frozen Spinach, thawed and drained
- 1 cup red bell pepper
- 8 cups Chicken Stock
- 1 Egg
- 1 Tab Olive Oil
- 1 1/2 cup Romano and 1/2 cup Parmesan cheese
- 1/2 tsp Black Pepper
- 1 tsp Italian Seasoning
- 2 cups diced Potatoes

Step 1
Meatballs Mix chicken sausage with spinach, 1/2 the onions, garlic,bread crumbs, cheese and the egg. Form into small meatballs and place on greased cookie sheet. Bake at 350 degrees for 20 minutes.
For the soup Brown onions in olive oil. Add carrots and red bell pepper. cook 2 minutes. Then add chicken stock, Rotel diced tomatoes and tomato sauce. Season with Black pepper and Italian seasoning. Cook 5-7 minutes then add heavy cream, cook 2 more minutes. Add meat balls and potatoes. Season with salt and pepper
