Fiesta Salsa

• 5 14.5 oz. cans petite diced tomatoes
• or
• 4 lbs. fresh tomatoes, to yield 9 cups finely diced
• 1 1.3 oz. pkg. Ball Fiesta salsa mix

Step 1

Combine tomatoes and contents of package in a medium saucepan.

Heat to a boil. Reduce heat and simmer 5 minutes.

Cool to room temperature, about 30 minutes.

Ladle salsa into clean jars to fill line. Twist on lids.

TIP: Add 1/4 cup chopped white onion and 1 tbsp. chopped fresh cilantro to each pint of salsa when serving.
