Scallion Vinaigrette

This is a wonderful dressing is from Bobby Flay. It works well with grilled vegetables, nice spring greens.

Ingredients
- 6 scallions, pale and dark green parts only, coarsely chopped
- 1 jalapeno, seeded and finely chopped
- 3 tbs sherry vinegar
- 3 tbs water
- 1 tsp honey
- 1/4 c, plus 1 tbs canola oil
- 3 tbs cilantro, chopped
- salt and black pepper

Step 1
In a blender, puree the scallions, jalapeno, vinegar, water and honey. Gradually add the oil. Add the cilantro and pulse. Season with salt and pepper and serve.
