Mexican Quiche

  • 4-5 flour tortillas
  • 12 ounces pepper cheese, grated
  • 2 cups scalded milk
  • 3 eggs, beaten
  • 2-7 oz cans chopped green chilies, drained
  • 1 large can french fried onions
  • 1 tsp pepper
  • 2 tsps chili powder
  • 1/2 tsp ground mustard



Step 1

Spray quiche dish with pam.

Line bottom with tortillas creating around an inch edge above the sides.

Scald the milk, add the seasonings and stir. Combine the cheese, eggs and chili peppers and pour into the quiche dish.

Add the milk mixture.

Bake in a preheated 350* oven for 40 minutes. Add onions and brown for 3-4 minutes.
