Ingredients

  • 2 lbs. alligator
  • 1 c. white wine
  • 2 c. chopped onions
  • 5 T oil
  • 4 tsp. finely chopped green pepper
  • 1 can Rotel tomatoes
  • 2 8 oz. cans tomato sauce
  • 2 tsp. Worcestershire sauce
  • 1/4 tsp. oregano
  • 1/2 c. celery
  • 1 bay leaf
  • 1/4 tsp. basil
  • 1 6 oz. can mushrooms
  • salt and cayenne pepper to taste
  • 1/4 c. chopped parsley
  • 4 tsp. shopped shallots

Step 1

Cube and soak alligator in wine for 1 hour. In large Dutch oven cook onions in oil until dark. Add pepper, celery and cook until tender. Add Rotel tomatoes and tomato sauce and stir. Toss in Worcestershire sauce, oregano, bay leaf and basil. Cook 10 minutes. Ad mushrooms and meat to the sauce. Cover and cook on low for 40-45 minutes. Season with salt and pepper. Add shallots and parsley and cook uncovered for 10 minutes
