Ingredients

  • Dough:
  • 2 sticks cold unsalted butter
  • 2 cups flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 cup ice water
  • Filling:
  • 2-3 cups blueberries or fruit of your choice
  • 2 Tablespoons cornstarch
  • 1 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon lemon zest

Preparation

Step 1

To make tart:
Cut the cold butter into cubes and add to the food processor until butter particles are the size of peas. While the machine is running add ice water. Place dough in plastic and refrigerate for one hour.

Filling;
Mix together all ingredients. Place parchment paper on cutting board and roll out dough into an 8" circle. Gently fold the border over the blueberries, pleating to make a circle. Transfer parchment paper with crostata on a cookie sheet.

Bake the crostata at 400-425 degree oven for 25-30 minutes or until crust is golden.
