White Chicken Chili

Ingredients
- 2 cans navy beans
- 1 lg. onion, diced
- 4 oz. butter
- 1/4 c. flour
- 3/4 c. chicken broth
- 2 c. milk (and use fat free half & half)
- 1 tsp. Tabasco
- 1 1/2 tsp. chili powder
- 1 tsp. cumin (or omit)
- 1/2 tsp. salt
- 1/2 tsp. white pepper (or use black)
- 8 oz. mild green chilies (diced)
- 5 boneless chicken breast (and boil them first and cut up)
- 1 1/2 c. Monterey jack
- sour cream

Step 1
Cook chicken and onion. Melt butter, whisk in flour - cook 2 to 3 minutes - stir in onions - add chicken broth and milk - bring to a boil and simmer 5 minutes. Stir in Tabasco, chili powder, cumin, salt and pepper. Add beans, green chilies, chicken and cheese. Cook 20 minutes. Serve with sour cream.
