Ingredients

  • 2 tbsp butter
  • 3 bunches green onions
  • 3 leeks
  • bag of spinach bag
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • pinch white pepper
  • 8 oz butter puff pastry
  • Buy 1 lb/500g box butter puff pastry, use half
  • 1 egg yolk
  • 2 tbsp milk
  • 1/2 cup shredded gruyere cheese or aged cheddar cheese

Step 1

Heat butter over medium heat, stir-fry onions, garlic, salt and pepper until oions are wilted and tender, about 4 mins. Let cool.
Roll pastry into 10 inch square. Cut off and reserve 1/2 inch strip from each edge. Place pastry square on parchment paper-lined baking sheet. Beat yolk with ilk, brush yolk mixture over edges of square. Place reserved strips over brushed edges. Brush tops of strips with yolk mixture.
Stir remaining yolk mixture into onion mixture, mix in gruyere cheese. Spread over pastry base. Bake in centre of 425 degree oven until pastry is golden and puffed 14 to 16 mins.
