Best Tuna Casserole
This is a tuna casserole that even my picky family loves! The potato chips or French fried onions give the casserole a crunchy crust.

Ingredients
- 1 (12 ounce) package rotini
- 1/2 cup chopped onion
- 4 cups shredded Cheddar or Cheddar Jack cheese
- 1 cup frozen green peas
- 2 (6 ounce) cans tuna, drained
- 2 (10.75 ounce) cans of your favorite condensed "cream of" soup (I like one can of Cream of Mushroom and one can of Cream of Onion)
- 2 (4.5 ounce) cans sliced mushrooms
- 1 cup crushed potato chips or French fried onions (I prefer the onions)

Preparation
Step 1
1. *Bring a large pot of lightly salted water to a boil.
Cook pasta in boiling water for 8 to 10 minutes, or
until al dente; drain.
*If using a microwave pasta cooker, fill the pot to the appropriate
line with salted water, and microwave for 16-20 minutes, or until
al dente. Drain.
2. Preheat oven to 425 degrees F (220 degrees C).
3. In a large bowl, thoroughly mix noodles, onion, 2
cups (8 oz.)cheese, peas, tuna, soup, and mushrooms.
Transfer to a 9x13 inch baking dish, and top with
remaining 2 cups (8 oz.)of cheese. If using potato chip crumbs,
sprinkle these on top now. If using French fried onions, wait and
add them two minutes before baking time is completed.
4. Bake for 15 to 20 minutes in the preheated oven, or
until cheese is bubbly, adding the French fried onions (if using)
during the last two minutes of baking time.
