Rhubarb Oatmeal Bars

Ingredients

  • 2 cups flour
  • 1 tsp. baking powder
  • 2 cups quick oatmeal
  • 1 1/2 cups brown sugar
  • 1 cup butter, softened
  • rhubarb filling

Preparation

Step 1

Combine flour and baking powder in a medium bowl, mix. Add oatmeal, brown sugar and softened butter. Stir until mixed. Press 2/3 of mixture into a greased 9" x 13" pan. Spread rhubarb sauce over pressed crust. Crumble remaining 1/3 oatmeal mixture over the top. Bake in a preheated oven at 350 degrees for 35 minutes.

RHUBARB FILLING:

3 cups diced rhubarb
1/4 cup water
1 cup sugar
2 tbsp. minute tapioca
1 tbsp. dry strawberry gelatin

Wash rhubarb and dice. In saucepan mix rhubarb, water and sugar; bring to a boil. Add tapioca. Simmer 15 minutes until rhubarb is tender. Remove from burner. Add dry strawberry gelatin. Allow to cool a bit before spreading over oatmeal crust.
