Sesame Shrimp Salad

Ingredients
- 2 carrots
- 1 tablespoon sesame seeds
- 1 tablespoon plus 1/4 cup light Asian toasted sesame salad dressing
- 1 pound large shrimp, peeled, deveined, tails left on
- 8 ounces snow peas
- 5 cups baby arugula, about 5 ounces

Step 1
Using vegetable peeler, cut carrots into thin ribbons. In large nonstick skillet, toast sesame seeds, stirring, over medium-high heat, about 1 minute; remove from skillet. In same skillet, heat 1 tablespoon salad dressing with 1 tablespoon water over medium-high heat. Add shrimp; cook, stirring occasionally, until opaque, 3-4 minutes, adding snow peas during last 1 minute of cooking time. Remove from skillet; cool 15 minutes. In large bowl, toss shrimp, snow peas and carrots with remaining 1/4 cup salad dressing. Serve over arugula sprinkled with sesame seeds.
