Ingredients
- 1 small onion,chopped fine
- 1 tbsp. butter
- 5 cups homemade chicken broth or 2 cans chicken
- broth,deluted with 2 cans water
- 1/2 cup rice
- 5 oz. fresh spinach,blanched or 1/2 package frozen
- spinach,thawed
- 2 cups cooked chicken,cut up
- Colonna grated Parmesan cheese

Preparation
Step 1
Saute onion in broth in butter until soft and lightly browned.Add chicken broth and bring to a boith,and bring to a boil.Add rice and simmer 35 minutes or until rice is almost tender.Chop spinach coarsely and add along with chicken.Simmer 5 minutes.Serve with Colonna Grated Parmesan cheese.
