Ingredients

  • 2 tablespoons olive oil
  • 1 Cup hash browns (Simply Potatoes)
  • 1/2 C green bell pepper, diced
  • 1/2 C sweet onion, diced
  • 1 can diced green chili's (jalapeno's if you like it hot)
  • 4 roma tomatoes, diced or 1 cup diced cherry or grape tomatoes
  • 4 eggs, lightly beaten
  • 3 Tablespoons milk
  • 1 C shredded Monterey Jack cheese
  • salt
  • ground black pepper

Preheat the oven to 350°F.

In a medium, oven-safe, nonstick skillet, heat the oil over medium heat. Add the hash browns, green pepper and onion, and cook for 5 minutes, or until the onion is translucent and potatoes are lightly browned. Beat the eggs and milk in a medium mixing bowl seasoning with some salt & pepper. Stir in the canned peppers & tomatoes, pour over potato mixture in the pan. Cook for 2 - 3 minutes, or until the eggs begin to set at the edges.

Bake in the oven for 10 - 15 minutes, or until the eggs are cooked and the mixture has puffed slightly. Add the shredded Monterey Jack cheese. Let the frittata cool slightly and cut it into wedges for serving. Season with salt & pepper to taste or spoon some of your favorite salsa or tabasco on the top.
