Papa's Potato and Cheese Croquettes

I don't remember having these, but found the recipe written out in Papa's handwriting. They do sound good!

Ingredients
- 1 1/4 pounds white potatoes, peeled
- 3 Tablespoons butter
- 2 oz. Parmesan cheese
- 2 eggs
- 3 1/2 oz. bread crumbs
- 4 grates of nutmeg
- salt and freshly ground black pepper
- oil for frying

Preparation
Step 1
Boil the potatoes in salted water until cooked; drain and mash with the butter and parmesan cheese. Season with the salt, pepper and nutmeg.
Beat the mixture very thoroughly then roll into sausages 1 1/2 x 4".
Lightly beat the eggs and dip the croquettes first into the egg, then roll them in bread crumbs.
Heat the oil and fry the croquettes a few at a time. They should be crisp and golden on the outside. Serve hot.
