Ingredients

  • 1/3 cup butter
  • 1/2 cup chopped onions
  • 1/2 cup chopped green bell peppers
  • 1/2 cup chopped celery
  • 1 Tbs minced garlic
  • 1/2 cup chopped scallions
  • 1 1/2 cups diced uncooked chicken
  • 1 1/2 cups sliced andouille sausage or other spicy smoked sausage
  • 1 pound peeled, deveined shrimp
  • 2 cups fresh or canned whole tomatoes
  • 1/2 cup tomato paste
  • 1 cup chicken broth
  • 1 bay leaf
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 1 cup raw rice

Step 1

Preheat oven to 350 degrees.

Melt the butter in a large oven-proof saucepan or dutch oven. Add the onion, bell pepper, celery and garlic and cook over moderately high heat until tender. Stir in the scallions, chicken, shrimp, and sausage. Saute the mixture an additional 5 minutes, then add the remaining ingredients, except the rice. Reduce the heat to low and simmer for 10-15 minutes. Stir in rice, cover the pan and simmer on the stove top, covered for 25-30 minutes.

Fluff the cooked jambalaya with a fork, remove the bay leaf, then serve.
