Ingredients

  • 1/2 cup salad oil
  • 1/3 cup tarragon vinegar
  • 1 Tbs sugar
  • 1 tsp thyme
  • 1/2 tsp dry mustard
  • 1 clove garlic, minced
  • 7 oz can artichoke hearts, drained and quartered
  • red or green pepper, chopped
  • 1/2 cup chopped summer sausage
  • 1/4 cup black olives
  • 3 cups each romaine and iceburg lettuce
  • 2 Tbs parmesan cheese
  • tomatoes

Preparation

Step 1

Mix together first 6 ingredients and pour over artichoke hearts. Refrigerate 4-6 hours or overnight.

Mix remaining ingredients and toss gently. Add dressing and mix. Serve.
