  • 12 garlic cloves, minced 12
  • 125 ml onion, chopped 1/2 cup
  • 15 ml olive oil 1 tbsp
  • 1 package frozen artichoke hearts (8 oz / 225 g) 1
  • 1 red pepper, cut into strips 1
  • 125 ml chicken broth 1/2 cup
  • 15 ml quick cooking tapioca 1 tbsp
  • 10 ml dried rosemary, crushed 2 tsp
  • 5 ml lemon peel, finely shredded 1 tsp
  • black pepper -
  • 750 g chicken breast, skinless, boneless 1 1/2 lb

Step 1


In small skillet, cook garlic and onion in hot oil over medium heat, stirring occasionally, about 5 minutes or until tender.

In a roasting pan, combine garlic mixture, artichoke, pepper, chicken broth, tapioca, rosemary, lemon peel and pepper. Add chicken, spoon some of the garlic mixture over chicken.

Cover and cook in preheated 350 F (180 C) oven for 3 hours or until chicken is cooked through.

Serves: 6
