Ginny's Crunchy Wheat Germ "Cookie"


The key to the crunchiness is to not make it too wet.

Ginny's Crunchy Wheat Germ Cookie 0 Picture


  • 1/4 cup Wheat Germ
  • 5 pkgs Truvia
  • 1/4 t. maple flavor (or whatever flavor you wish)
  • pinch baking soda
  • pinch salt
  • 1/2 t. cinnamon
  • Just enough seltzer water - or diet cola - to make a crumbly mixture.



Step 1

Spray three silicone muffin cups with non-stick cooking spray.
Divide the crumbly mixture into the three cups.
Microwave on High for 1 minute each.
Let each one sit for a minute and test to see how crunchy it is. Microwave 30 seconds more if still soft.
Let sit in muffin cup for a minute. Then, pop out onto a cooling rack. Let cool until hardened up.

Eat immediately or store in a plastic baggie.

Makes 3 "cookies"
