Ingredients
- 1 1/2 stiks softened butter
- 1 cup sugar
- 3 large eggs
- 1 1/2 cups self-rising flour*
- 1 tbsp. warm water
- 1 tsp. vanilla exract
- or whisk 1 1/2 tsp. baking powder and 1/4 tsp. salt into 1 1/2 cups plain flour

Adjust oven rack to lower-middle position and heat oven to 400 degrees. Line a 12 cup muffin tins with cupcake papers. Beat butter and sugar until light and fluffy. starting and ending with an egg, alternate adding eggs and flour, beating until each is thoroughly incorporated. Beat in water and vanilla until just incorporated.
Evenly divide batter among prepared cups. Bake until fully cooked and golden, 15 to 17 minutes. Remove from oven. Let cupcakes stand a couple of minutes, then turn onto a wire rack to cool.
