Ingredients

  • 1/4 cup chopped onion
  • 1/4 cup chopped parsley
  • 1 clove garlic, crushed
  • 1 teaspoon olive oil
  • 3/4 can chopped tomatoes
  • 1/4 cup red wine
  • 1/4 teaspoon dried basil
  • 1/8 teaspoon dried oregano
  • 2 ounces fish(halibut, red snapper, or, cod), cubed
  • Salt and pepper to taste
  • 1/2 cup cooked, drained linguine noodles

Step 1

In medium saucepan, saute onion, parsley, and garlic in olive oil. Add tomatoes, wine, basil, and oregano. Cover and simmer for 10 minutes. Add fish; cover and simmer for 5 minutes or until fish flakes when tested with fork. Season with salt and pepper and serve over linguine.
