  • Apple Cupcake Recipe
  • 2-1/4 cups of flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 cup unsalted butter
  • 1-1/2 cups sugar
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 cups shredded apples - I prefer MacIntosh, but you can use any kind. The apples work best shredded through a processor or finely chopped.

Preparation

Step 1


Preheat oven to 350 degrees
Line cupcake tins with paper or foil liners
In medium bowl mix flour, baking soda, cinnamon, nutmeg, and salt
In a large bowl mix butter and sugar together until light and fluffy
Mix in eggs and vanilla, gradually adding flour until all well mixed
Fold in apples
Divide batter into 18-22 cups
Bake for 18 to 20 minutes, until tops spring or an inserted toothpick comes out clean
Cool cupcakes before frosting and decorating
