Bruschetta Chicken Bake

Ingredients

• 1 can (14.5 oz.) diced tomatoes, undrained
• 1 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken
• 1/2 cup water
• 2 garlic cloves, minced
• 1 1/2 lbs. boneless skinless chicken breasts, cut into bite-sized pieces
• 1 teaspoon dried basil leaves
• 1 cup shredded mozzarella cheese

Preparation

Step 1

Preheat the oven to 400 degrees.

Place tomatoes in a medium bowl add stuffing mix, water and garlic; stir just until stuffing mix is moistened. Set aside.

Place chicken in a 9 x 13" baking dish; sprinkle with the basil and cheese. Top with stuffing mixture.

Bake 30 minutes or until chicken is cooked through.

Makes 6 (1 cup) servings.
